Grapes grows in the conditions of attraction. The amount of grapes on the vine is regulated and significantly reduced - to 1.6 kg. In the Kakheti terroar (Georgia), the family of Iukuridze has a vineyard of 9 hectares of autochthonous Georgian variety of Saperava. The Shabo terroar also grows vines of a unique autochthonous grape variety Telti Kuruk, whose age is more than 40 years. Grape berries are collected in boxes by hand and after 15 minutes, refrigerators are delivered for multiple sorting and delicate processing with temperature control into "Wine House Shabo", the installation of which is one of the best in Europe. Here they adhere to the principle of Hand Made and create original varieties of wines, as well as atypical wines of double and triple blending.
Wines are created using elite microvings. The fermentation of white grapes is carried out in oak barrica with temperature control, which is unique to Ukraine. Red grapes have undergone a fermentation process on mesge with temperature control in special Taransaud oak. The wine is maintained in oak barrica - not less than 9-12 months. Required additional bottling. Quality control is exercised by international experts Sarl derenoncourt (France).
