Vaja Grand Cru's sparkling wines are made from its own grapes of the Shabo terror. Grape vines of truly champagne varieties were purchased in Europe, taking into account the features of Shabo soil and planted on high-level mini-curls of the terror, the quality of which corresponds to the Grand Cru classification. Sparkling wines are created in the modern "House of Sparkling Wines Shabo", made according to ancient French technology. It is noteworthy that for the first time this technology was used in Shabo in the 19th century, during the Swiss displaced persons. And today, continuing the ancient traditions, only outstanding blend of basic wines that have previously undergone a holding process for 6 months in French oak barrica, equipped with a system of regulation and temperature control, are selected for the production of the exclusive collection of classic sparkling Vaja Grand Cru wines, which have previously undergone a process in French oak barrics.
In the corresponding technology, champagne is carried out directly in bottles on thin yeast sediment with a subsequent long endurance - from 5 years. Extra brut sparkling wine is characterized by non-doosage (complete absence of expeditionary liqueur), for other sparkling wines technology involves the use of the highest quality expedition liqueur in quantities that corresponds to the level of sweet wine sweetness. Quality control is exercised by Sarl Denoncourt (France) and Institut Oenologique de Champagne (France, Champagne).
