We follow the principles of traditional winemakers. The key idea is that wine is born in the vineyards. We nurture and care for a unique terroir of 1,200 hectares of vineyards.

 

Back in the early years of SHABO, we conducted a full and detailed soil analysis here, engaging international experts and institutes. We created a terroir map, based on which we selected and planted our vineyards in the best possible plots.

 

 

We do our best to ensure that only the highest quality grapes would  be used to produce Ukrainian wines.

 

We provide daily care and an integrated approach.

  • We loosen the soil in the fall, soon after after harvest, so that the vines had enough time to accumulate moisture and get saturated with all the necessary elements;
  • We remove leaves in the bunch area during the vegetation season;
  • We break off excess shoots; We control harvest by leaving an average of 2 kg of grapes per vine  to get perfect bunches that will take the best from the earth, the sun and the vine growers' care. We  harvest our grapes by hand. Within 15-30 minutes we deliver grapes to the production facilities by refrigerated trucks.

 

We grow more than 20 grape varieties, applying an individual approach to each of the 4 million vines. We purchased most of our vines from the best nurseries in France, Italy and Georgia. We are growing a unique indigenous grape variety - Telti-Kuruk. There is no such indigenous variety anywhere else in the world. It is considered to be not only the hallmark of our terroir, but also of Ukraine. It is an exclusive grape variety. It has not changed its organoleptic properties for hundreds of years, having survived the phyloxera period. It gives connoisseurs the opportunity to taste a special wine.

  • It dates back to the "Ottoman period" of the region
  • Its bunches are shaped like a fox's tail, this is how it got its Ottoman name Telti Kuruk meaning “fox’s tail” in Turkish.
  • The first Ukrainian wine of Controlled Appellation of Origin (analogue to the French Appellation d'Origine Controllee) was made from Telti-Kuruk.

 

Michelin restaurants choose Telti-Kuruk wines because they are special and unique. The oldest and largest vineyards of indigenous self-rooted Telti-Kuruk are located in Odesa region and grow in our terroir, covering the area of over 40 hectares. The oldest vines of this variety are more than 50 years old!
